The Ayurvedic sugar specialty Jaggery (Goor) is an almost basic whole sugar. The whole sugar is made by hand. According to Ayurvedic teaching, jaggery balances Vata and Pitta and increases Kapha. Jaggery contains natural vitamins and minerals.
Jaggery tastes aromatic and gives sweet dishes and especially spiced teas a particularly tasty note. Also ideal for baking or for cold and hot drinks and for cooking. The unrefined jaggery whole cane sugar is not bleached with sulfur like industrially manufactured, simple sugar. Jaggery remains natural. Jaggery contains important minerals necessary for metabolism such as organic acid, vitamins, minerals and betaine, which lower the homocysteine levels in the blood and thus i.a. arteriosclerosis prevent.
Jaggery: Low glycemic indexJaggery also has a low glycemic index, which means that it affects blood sugar levels far less than refined white sugar. In Ayurvedic medicine, jaggery is even used as a remedy.
