Dried ginger has a spicy taste (Rasa) and a slightly oily quality (Guna). Ginger root - fresh (Ardrakam) or dried - is one of the most important spices in Ayurveda. According to Ayurvedic understanding, it supports the metabolism in many ways and helps with fat digestion.

Dried ginger (Shunţhi), taste (Rasa) is sharp and the properties (Guna) slightly oily. The rootstock is used. Dried ginger reduces the Vata and Kapha doshas. It can disturb Pitta.
Fresh ginger, on the other hand, has a spicy taste and is heavy, dry and spicy. The difference is not very great, only the effect on post-digestion is significantly different. Try it yourself. We find that fresh ginger has a sweet effect and dried ginger is just spicy. Ginger reduces Vata and Kapha as mentioned, but if consumed in moderation, Pitta is not increased. Ginger goes wonderfully with vegetable dishes, chutneys, as well as with desserts and baked goods.
